If you don't want Autopay, then you don't use it. If a service only uses Autopay and you are so against it, then you don't subscribe to that service.
For someone paycheck to paycheck, autopay is understandably a concern as to having money in the account on time. Alternatively a reasonable credit card to use for autopay (so known amounts) and then you manually make the payment before the due date of the card. Gives you the breathing room you need to make payment on your own schedule.
Regardless if you approve of it or not, the businesses will decide if they use Autopay exclusively or not. As such you make the choice where to subscribe.
